  • 1 lb lean ground beef
  • 1/2 cup plain or Italian breadcrumbs
  • 1 cup whole-berry cranberry sauce
  • 1/4 cup low-sodium soy sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup honey or brown sugar
  • 2 tbsp Dijon mustard

Instructions

  1. In a large bowl, mix together ground beef, breadcrumbs, onion powder, garlic powder, salt, and pepper until well combined.
  2. Roll the mixture into 1-inch meatballs and set aside on a plate.
  3. In another bowl, whisk together cranberry sauce, soy sauce, honey or brown sugar, and mustard until smooth.
  4. Place meatballs in the crockpot and pour the sauce over them. Stir gently to coat.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the meatballs are tender.
