  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup light brown sugar
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup mid-range bourbon
  • 4 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 2 green onions, chopped (for garnish)
  • 1 tsp sesame oil
  • 2 tbsp cornstarch mixed with 3 tbsp water (for thickening)

Instructions

  1. Trim excess fat from chicken breasts and cut them into bite-sized pieces.
  2. In a bowl, whisk together brown sugar, soy sauce, bourbon, garlic, and ginger.
  3. Place chicken in the crock pot and pour the sauce over it; toss to coat.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is tender.
  5. For a thicker sauce, stir in the cornstarch slurry during the last 30 minutes of cooking.
