  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 24 chipotle peppers in adobo sauce (to taste)
  • 8 oz cream cheese, softened
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Fresh cilantro (optional for garnish)

Instructions

  1. In a large pot, heat 1 tbsp olive oil over medium heat. Sauté the diced onion and minced garlic until golden brown (about 5 minutes).
  2. Add the boneless chicken breasts to the pot and cook until they are white on all sides (about 7-10 minutes).
  3. Stir in the diced tomatoes with juices, black beans, chipotle peppers, cumin, and chili powder; mix well.
  4. Pour in the chicken broth until covered and let simmer on low heat for about 20 minutes.
  5. Add softened cream cheese to the pot and stir until fully melted for a creamy texture.
