  • 2 celery stalks, chopped (about 1 cup)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 oz egg noodles
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt & pepper to taste
  • 2 tbsp olive oil or butter

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, celery, and carrots until soft.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Place chicken breasts into the pot; stir to coat with vegetables.
  4. Pour in chicken broth along with thyme, parsley, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  6. Remove chicken; shred it using forks and return to the pot.
  7. Stir in egg noodles; cook until tender (7-10 minutes).
  8. Adjust seasoning before serving and garnish with fresh parsley if desired.
