- 4 large bell peppers (any color)
- 1 cup lump crab meat
- 1 cup medium shrimp, chopped
- 1/2 cup finely chopped sweet onion
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup plain breadcrumbs
- 2 tsp Old Bay seasoning
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds; rinse under cold water.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic until fragrant.
- In a bowl, combine sautéed mixture with crab meat, shrimp, breadcrumbs, Parmesan cheese, lemon juice, and Old Bay seasoning; mix well.
- Stuff each pepper generously with the filling and place upright in a baking dish.
- Cover with foil and bake for 25 minutes; remove foil after 15 minutes to brown the tops.
- Allow to cool slightly before serving.
