Instructions

  1. Preheat your oven to 250°F (120°C) and line two baking sheets with parchment paper.
  2. Pop the popcorn kernels using an air popper or stovetop method, then transfer to a large bowl.
  3. In a medium saucepan over medium heat, melt the butter, brown sugar, and corn syrup until bubbling gently. Boil without stirring for 4-5 minutes.
  4. Remove from heat and stir in vanilla extract and salt. Quickly add baking soda while stirring vigorously to achieve a light texture.
  5. Drizzle the caramel sauce over the popped popcorn, tossing gently until well coated.
  6. Spread the caramel-coated popcorn on the prepared baking sheets and bake for 45 minutes, stirring every 15 minutes for even crunchiness.
