  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 small flour or corn tortillas
  • 2 tablespoons olive oil
  • Juice of 2 fresh limes
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup diced onions
  • 1 cup shredded cheddar or pepper jack cheese
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Gather and prep all ingredients; chop bell peppers and onions.
  2. Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove from heat.
  3. Add the chopped veggies, cumin, and smoked paprika to the skillet. Sauté until veggies are tender.
  4. Shred the cooked chicken using two forks and return it to the skillet; mix well.
  5. Lay out tortillas, fill with chicken mixture, sprinkle cheese, and squeeze lime juice on top.
