- 3–4 boneless skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1-inch piece fresh ginger, grated
- 2 cups broccoli florets
- 1 cup bell peppers, thinly sliced (mixed red and yellow)
- ¼ cup low-sodium soy sauce
- 2 tbsp light brown sugar
- 1 tbsp sesame oil
- 8 oz noodles (egg or rice noodles)
Instructions
- Slice chicken breasts into bite-sized pieces and pat dry.
- In a bowl, mix soy sauce, grated ginger, minced garlic, and brown sugar. Add chicken and marinate for at least 30 minutes.
- Heat sesame oil in a large skillet over medium-high heat. Sauté broccoli and bell peppers for about 5 minutes until tender.
- Move veggies aside and add marinated chicken to the skillet. Cook for approximately 8 minutes until browned and cooked through.
- Toss in cooked noodles and any remaining marinade; stir gently for another 3 minutes until heated through.
- Serve hot, garnished with sesame seeds or chopped scallions if desired.
