  • 1.5 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 4 cloves fresh garlic, minced
  • 3 tbsp Dijon mustard
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp fresh thyme or rosemary

Instructions

  1. Wash and peel the Yukon Gold potatoes; cut them into equal-sized chunks.
  2. Rub olive oil over each chicken breast; season with salt, pepper, and herbs.
  3. In a large skillet over medium heat, add olive oil until shimmering. Sear chicken breasts for 5-7 minutes on one side until golden brown.
  4. Flip the chicken; add chopped potatoes and minced garlic to the skillet. Sauté for about 1 minute until fragrant.
  5. Pour in chicken broth while scraping up browned bits from the skillet. Stir in Dijon mustard and heavy cream until well combined.
  6. Cover and simmer on low heat for 20-25 minutes, or until chicken is cooked through (165°F) and potatoes are fork-tender.
