  • 4 medium bell peppers (red, green, or yellow)
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. In a large bowl, mix shredded chicken, cream cheese, buffalo sauce, cheddar cheese, garlic powder, onion powder, and chopped green onions until well combined.
  3. Generously fill each pepper with the buffalo chicken mixture.
  4. Place stuffed peppers upright in a baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
  5. Let cool slightly before serving. Garnish with extra green onions or ranch dressing if desired.
