  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 12 oz pasta (penne or rotini recommended)
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and cooked through.
  2. 2. In a large pot of salted boiling water, cook pasta according to package instructions until al dente (8-10 minutes). Drain.
  3. 3. In another pan, heat remaining olive oil over medium heat. Sauté minced garlic for about 30 seconds before adding cherry tomatoes. Cook until the tomatoes soften.
  4. 4. Stir in chopped basil and balsamic vinegar into the tomato mixture.
  5. 5. Slice cooked chicken into strips or cubes and add it to the drained pasta along with the tomato mixture. Toss gently until combined.
  6. 6. Serve warm, garnished with extra basil and a drizzle of balsamic vinegar if desired.
