  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, melt the butter and mix in granulated and brown sugars until smooth.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Sift together flour, cocoa powder, baking powder, and salt; fold into the wet mixture until just combined.
  5. If using, fold in chocolate chips.
  6. Use a cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 10-12 minutes until edges are firm but centers look slightly underbaked.
  8. Let cool on the sheet before transferring to a wire rack.
