  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup low-sodium beef stock
  • 1 sheet puff pastry (thawed)
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and cook for another minute.
  2. Stir in ground beef, breaking it apart until browned. Add carrots and cook for 3-4 minutes.
  3. Pour in beef stock, season with salt, pepper, thyme, and Worcestershire sauce. Simmer for 10 minutes.
  4. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface; cut into circles for your pie dish.
  5. Fill each pastry round with the meat mixture, brush edges with egg wash, and seal with another pastry circle.
  6. Bake for 25-30 minutes until golden brown.
