Ingredients

  • 4 salmon fillets (6 oz each)
  • 1/2 cup bourbon
  • 2 ripe peaches, sliced
  • 1/4 cup brown sugar
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice peaches into wedges and set aside.
  3. In a bowl, whisk together bourbon, brown sugar, Dijon mustard, lemon juice, salt, and pepper until combined.
  4. Line a baking sheet with parchment paper and place the salmon fillets skin-side down. Arrange peach wedges around the salmon.
  5. Drizzle half of the bourbon glaze over the salmon and peaches.
  6. Roast in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.
