- 4 Dried Guajillo Chiles
- 8 Soft Corn Tortillas
- 1 Onion (sliced)
- 4 Garlic Cloves (minced)
- 1 cup Fresh Cilantro (chopped)
- 2 cups Mexican Cheese Blend
- 2 cups Low-Sodium Chicken Broth
- 2 tsp Cumin Powder
- Juice of 1 Lime
Instructions
- Prepare the Beef Filling: Trim excess fat from the beef chuck roast, cut into chunks, season with salt and pepper. Sear in a hot skillet until browned on all sides.
