  • 1 lb ground beef (lean)
  • 8 large flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 cup salsa (your choice)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic until golden.
  3. Add ground beef, breaking it apart as it cooks until browned. Stir in cumin and chili powder.
  4. Spread salsa on the bottom of a baking dish. Fill each tortilla with the beef mixture and sprinkle with cheese. Roll tightly and place seam-side down in the dish.
  5. Pour remaining salsa over the top and sprinkle with remaining cheese. Bake for 20-25 minutes until bubbly and golden.
