  • 4 lbs beef short ribs (bone-in)
  • 1 cup balsamic vinegar
  • 1 cup bourbon
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1/4 cup brown sugar (light)
  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme (stripped from stems)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C). In a large Dutch oven over medium-high heat, season short ribs with salt and pepper. Sear each side for about 3-4 minutes until golden brown. Remove and set aside.
  2. In the same pot, sauté diced onions for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Pour in balsamic vinegar and bourbon, scraping up any browned bits from the pot. Simmer for about 2 minutes until slightly thickened.
  4. Return short ribs to the pot, add beef broth until nearly submerged, then stir in brown sugar and thyme.
  5. Cover and transfer to the oven; braise for about 3 hours or until fork-tender.
  6. Let rest for 10-15 minutes before serving over mashed potatoes or roasted vegetables.
