  • 4 medium artichokes
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 cup Italian-seasoned breadcrumbs
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Rinse artichokes under cold water and trim stems.
  2. In a bowl, combine breadcrumbs, Parmesan, garlic, lemon juice, salt, and pepper. Add olive oil gradually until moist yet crumbly.
  3. Gently pull apart artichoke leaves and stuff the breadcrumb mixture between each leaf.
  4. Place stuffed artichokes upright in a baking dish with half an inch of water. Drizzle with olive oil and cover loosely with foil.
  5. Bake for 30-40 minutes until tender and golden brown. Let cool slightly before serving.
