  • 8 large eggs
  • 1 cup whole milk
  • 8 slices thick-cut bacon, chopped
  • 2 cups cubed day-old bread
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup finely chopped onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels.
  3. In the same skillet, sauté onions and bell peppers until translucent (about 5 minutes). Set aside to cool slightly.
  4. In a bowl, whisk together eggs and milk until frothy.
  5. In a large mixing bowl, combine cooked bacon, sautéed veggies, cubed bread, shredded cheese, salt, and pepper. Pour egg mixture over everything and gently fold until combined.
