  • 1 lb flank or sirloin steak
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 3 minced garlic cloves
  • 2 tsp dried oregano
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ cup crumbled feta cheese
  • 1 cup cooked quinoa or rice

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add steak and let marinate for at least 15 minutes.
  2. Heat grill or skillet over medium-high heat. Cook steak for about 4-5 minutes per side until browned.
  3. Cook quinoa or rice according to package instructions; fluff once done.
  4. In a separate pan, lightly sauté cherry tomatoes until they blister.
  5. Layer quinoa or rice in bowls and top with sliced steak, sautéed tomatoes, diced cucumber, and crumbled feta.
  6. Drizzle with olive oil and sprinkle with extra oregano before serving.
