  • 8 oz fettuccine pasta
  • 2 (6 oz) salmon fillets
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • Zest of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the fettuccine according to package instructions until al dente.
  2. In a skillet over medium heat, add olive oil and cook the salmon fillets skin-side down for 4-5 minutes until golden brown; flip and cook for another 3-4 minutes. Remove from skillet and set aside.
  3. Sauté minced garlic in the same skillet until fragrant (about 30 seconds). Pour in heavy cream, stirring gently.
  4. Add fresh spinach to the creamy mixture until wilted. Stir in lemon zest.
  5. Flake the cooked salmon into bite-sized pieces and fold into the sauce along with drained fettuccine. Mix in grated Parmesan cheese until well combined.
  6. Adjust seasoning with salt and pepper as needed, then serve immediately with extra Parmesan on top.
