  • 1 cup mascarpone cheese
  • 1/2 cup granulated sugar
  • 4 large eggs (separated)
  • 1 cup coquito
  • 1 cup ladyfinger cookies
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract

Instructions

  1. Gather all ingredients before starting.
  2. In a bowl, whip mascarpone cheese and sugar until smooth. Add egg yolks one at a time, mixing until creamy.
  3. Stir in coquito and vanilla extract gently.
  4. In another bowl, beat egg whites until soft peaks form; fold into mascarpone mixture.
  5. Quickly dip ladyfingers in coquito and layer them in your dish.
  6. Spread half of the mascarpone filling over the ladyfingers. Repeat layers once more.
  7. Sift cocoa powder over the top layer and refrigerate for at least four hours or overnight.
