  • 1 cup high-quality seitan, cubed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 cup plant-based cream (or cashew cream)
  • 8 oz wide egg noodles (or gluten-free pasta)
  • 1 tbsp Dijon mustard
  • 2 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Clean and slice mushrooms; dice the onion and mince garlic.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add mushrooms and garlic; cook until golden brown (8-10 minutes).
  4. Stir in Dijon mustard, paprika, salt, pepper, and seitan; cook for an additional 5 minutes.
  5. Pour in vegetable broth and simmer for 10 minutes until slightly thickened. Mix in plant-based cream until smooth.
  6. Cook pasta according to package instructions; drain and combine with the stroganoff sauce before serving.
