  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup semi-sweet chocolate chips
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, granulated sugar, egg, and vanilla until light and fluffy.
  3. Fold in the grated zucchini until fully incorporated.
  4. In another bowl, sift together flour, baking soda, baking powder, cinnamon (if using), and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Avoid over-mixing for tender bars.
  6. Gently fold in chocolate chips.
  7. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  8. Allow to cool slightly before cutting into squares.
