  • 2 lbs chuck roast, cut into 1-inch pieces
  • 4 medium carrots, sliced thickly
  • 3 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, diced
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp Worcestershire sauce
  • Cornstarch (optional for thickening)

Instructions

  1. Prep all ingredients by chopping the vegetables and dicing the chuck roast.
  2. In a hot skillet over medium-high heat, sear the beef chunks until brown on all sides.
  3. Layer the beef in the bottom of your crockpot followed by onions, carrots, potatoes, garlic, thyme, and bay leaves.
  4. Pour in the beef broth and Worcestershire sauce until ingredients are submerged.
  5. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  6. Taste before serving; adjust seasoning as necessary and add cornstarch slurry if desired.
