Instructions
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg until well blended.
- In another bowl, combine milk, melted butter, and egg; mix until smooth. Pour into dry ingredients and stir gently until just combined.
- Heat a non-stick skillet over medium heat and add a little butter. Pour in about 1/4 cup of batter for each pancake and cook until bubbles form (about 2-3 minutes), then flip.
- For the caramel apple compote: In a saucepan over medium heat, combine sliced apples with brown sugar and cinnamon. Cook until tender (about 5-7 minutes).
- Serve pancakes stacked high, topped with warm caramel apple compote.
