- 1 ½ lbs skirt steak
- ¼ cup extra virgin olive oil
- 4 cloves fresh garlic, minced
- ¼ cup fresh lime juice (about 2 limes)
- ½ cup chopped fresh cilantro (optional)
- ¼ cup low-sodium soy sauce
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp freshly cracked black pepper
- 1 tsp salt
Instructions
- Create the marinade by whisking together olive oil, soy sauce, lime juice, garlic, cumin, chili powder, salt, and pepper in a large bowl.
- Add chopped cilantro and mix well.
- Place the skirt steak in a resealable plastic bag or shallow dish and pour the marinade over it. Refrigerate for at least 1 hour (preferably overnight).
- Preheat your grill to medium-high heat (400°F/200°C) and clean/oil the grates.
- Remove the steak from the marinade and shake off excess liquid. Grill for about 4-5 minutes on each side until caramelized and marked.
- Let the steak rest for 5-10 minutes before slicing against the grain into thin strips.
