  • 2 large Yukon Gold potatoes, diced

  • 4 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 bay leaves
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  2. Add diced onions and minced garlic to the pot; sauté until fragrant (around 3-4 minutes).
  3. Stir in chopped carrots and potatoes along with bay leaves and thyme.
  4. Pour in beef broth and red wine, bringing the mixture to a gentle boil while scraping any brown bits from the bottom of the pot.
  5. Reduce heat to low, cover, and let the stew simmer for 1.5 to 2 hours until the beef is fork-tender.
  6. Taste and adjust seasoning with salt and pepper before serving.
