  • 1 can (15 oz) baked beans
  • 1 cup kimchi (store-bought or homemade)
  • 4 large eggs
  • 2 tsp sesame oil (plus extra for frying)
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 1/2 tsp chili flakes (optional)

Instructions

  1. Prepare all ingredients, chopping the green onions and setting aside the kimchi and baked beans.
  2. In a medium saucepan over medium heat, warm baked beans and half of the kimchi until bubbling.
  3. In a separate pan, heat sesame oil over medium heat. Add the remaining kimchi and sauté for 3 minutes until fragrant.
  4. In the same pan as the kimchi, add more sesame oil if necessary and crack in the eggs. Fry until whites are set but yolks remain runny, about 4 minutes; season with salt and pepper.
  5. Serve warm baked beans in bowls topped with sautéed kimchi and fried eggs. Garnish with green onions.
