  • 2 cups butternut squash, cubed
  • 2 large sweet onions, sliced
  • 1 sheet puff pastry, thawed
  • 2 tbsp extra virgin olive oil
  • 3 sprigs fresh thyme
  • 3 large eggs
  • 4 oz cream cheese, room temperature
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced onions and cook until golden, about 10-15 minutes.
  3. Add cubed butternut squash, thyme, salt, and pepper; sauté for another 8-10 minutes until slightly softened.
  4. Roll out puff pastry to about ¼ inch thick and place in a tart pan.
  5. In a bowl, mix cream cheese and eggs until smooth; stir in the onion-squash mixture.
  6. Pour filling into the pastry crust and bake for 25-30 minutes until golden brown.
  7. Allow to cool slightly before serving.
