Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Add the lemon zest and lemon juice to the mixture; mix until combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Scoop out dough balls about an inch in diameter and roll smooth.
  6. Place on the prepared baking sheet about two inches apart and bake for 10-12 minutes until lightly golden at the edges.
  7. Allow cookies to cool slightly before rolling each in powdered sugar. For extra sweetness, repeat after they have cooled completely.
