Banana sushi is a fun and delicious treat that’s perfect for breakfast, snacks, or dessert.   • 2 ripe but firm bananas
  • 4 rice paper wrappers
  • 4 tbsp peanut or almond butter (natural)
  • ½ cup granola
  • ¼ cup coconut flakes
  • 2 tbsp honey or maple syrup

Instructions

  1. Gather all ingredients on a clean surface.
  2. Soak one rice paper wrapper in warm water for about 15 seconds until pliable.
  3. Place the wrapper on a clean surface and spread 1 tbsp of nut butter across the center.
  4. Lay one peeled banana horizontally in the middle of the wrapper. Sprinkle with granola and coconut flakes.
  5. Fold the sides of the wrapper over the filling, then roll tightly from bottom to top until fully enclosed.
  6. Slice into bite-sized pieces and drizzle with honey or maple syrup before serving.
