  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 1 can (4 oz) diced green chiles
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • ½ cup sour cream or Greek yogurt (optional)

Instructions

  1. Prep your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, drizzle olive oil and sauté onions until translucent (about 4-5 minutes). Add garlic and stir until fragrant.
