  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 1 tsp garlic powder
  • 2 tbsp low-sodium soy sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups low-sodium beef broth
  • 2 tbsp cornstarch
  • 1 tbsp Worcestershire sauce

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic powder, soy sauce, salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into golf ball-sized meatballs and place on a plate.
  3. (Optional) Heat a skillet over medium heat with a little oil to sear the meatballs until browned on all sides.
  4. Place the meatballs in the slow cooker. Mix beef broth with Worcestershire sauce and cornstarch; pour over the meatballs.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Stir gently before serving; thicken gravy as desired by adding more cornstarch mixed with water.
