  • 8 oz spaghetti or linguine
  • 1/4 cup extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet over medium heat, add olive oil. Once hot, sauté minced garlic and red pepper flakes until fragrant (about 1-2 minutes), ensuring not to burn the garlic.
  3. Add drained pasta to the skillet with garlic. Toss everything together, drizzling more olive oil if needed. If dry, gradually add reserved pasta water.
  4. Taste and season with salt and freshly cracked black pepper as desired.
  5. Remove from heat; stir in chopped parsley and grated Parmesan until well combined.
  6. Plate your dish beautifully, garnishing with extra parsley and cheese if desired.
