Ingredients

  • 3 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Slice zucchinis evenly and set aside.
  3. In a bowl, mix ricotta cheese, half of the mozzarella, basil, salt, and pepper until smooth.
