- 1 cup heavy cream

Instructions
- Preheat oven to 400°F (200°C). Toss whole sweet potatoes with olive oil and salt. Roast for about 45 minutes until tender.
- Once cool, scoop out the flesh into a bowl. Add heavy cream, egg yolks, granulated sugar, vanilla extract, and salt. Blend until smooth.
- Divide the mixture among ramekins in a baking dish filled with hot water halfway up the sides.
- Bake for 30-35 minutes until set but slightly wobbly in the center. Cool completely and refrigerate for at least two hours.
- Before serving, sprinkle brown sugar on top and caramelize using a kitchen torch or broiler until golden brown.
