  • 2 medium sweet potatoes (about 1 lb)
  • 1 cup heavy cream
  • 4 large egg yolks
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • ¼ tsp salt
  • 2 tbsp brown sugar (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Toss whole sweet potatoes with olive oil and salt. Roast for about 45 minutes until tender.
  2. Once cool, scoop out the flesh into a bowl. Add heavy cream, egg yolks, granulated sugar, vanilla extract, and salt. Blend until smooth.
  3. Divide the mixture among ramekins in a baking dish filled with hot water halfway up the sides.
  4. Bake for 30-35 minutes until set but slightly wobbly in the center. Cool completely and refrigerate for at least two hours.
  5. Before serving, sprinkle brown sugar on top and caramelize using a kitchen torch or broiler until golden brown.
