  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp espresso powder (dissolved)
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Cream together the butter and sugar until fluffy.
  2. Gradually mix in flour, cocoa powder, baking powder, and espresso powder until combined; the dough should be soft but not sticky.
  3. Scoop rounded balls onto lined baking sheets. Bake for 10-12 minutes until edges are firm.
  4. Cool the cookies on a wire rack completely.
  5. Whip heavy cream until soft peaks form, then fold in mascarpone and remaining espresso powder.
  6. Spread filling on one cookie and top with another to create a sandwich. Dust with cocoa before serving.
