Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup honey or pure maple syrup
  • 1/2 cup chopped almonds or walnuts
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, nuts, and salt.
  3. In a separate bowl, mix honey (or maple syrup), melted butter (or coconut oil), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Grease a muffin tin or use silicone molds. Scoop the mixture into muffin cups and press down firmly.
  6. Bake for 15-20 minutes until golden brown. Cool slightly before removing from the tin.
