  • 1 medium sweet potato (about 200g)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 green onions, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil (for frying)

Instructions

  1. Grate the zucchini and sweet potato, then squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, mix grated zucchini, sweet potato, green onions, flour, eggs, salt, and pepper until just combined.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Use a tablespoon to drop spoonfuls of the batter into the skillet and flatten slightly. Fry for about 3-4 minutes per side until golden brown.
