  • 1 cup bell peppers, finely chopped (mix of red and yellow)
  • 3 green onions, finely chopped
  • 1 cup shredded cheese (Monterey Jack and Cheddar blend)
  • 12 egg roll wrappers
  • 2 tsp cumin
  • 1 tsp chili powder
  • Oil for frying (vegetable oil recommended)

Instructions

  1. Cook the chicken in a pan over medium heat until fully cooked, about 6-8 minutes per side. Shred once cooled.
  2. In a large bowl, mix shredded chicken with bell peppers and green onions. Add cumin and chili powder; stir well.
  3. Place about two tablespoons of filling in the center of an egg roll wrapper. Fold the bottom corner over the filling, tuck in the sides tightly, then roll up completely.
  4. Heat vegetable oil in a deep skillet over medium heat. Fry egg rolls until golden brown on all sides, about 3-4 minutes per batch.
