  • 1 large eggplant, sliced into ½-inch rounds
  • 2 cups seasoned breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 2 cups marinara sauce (homemade or jarred)
  • 2 large eggs, beaten
  • 3 tbsp extra virgin olive oil
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Sprinkle salt over the eggplant slices and let them sit for 30 minutes to draw out moisture.
  2. Rinse and pat dry the eggplant slices. Dip each slice in beaten eggs, then coat with seasoned breadcrumbs.
  3. Arrange the coated eggplant slices on a parchment-lined baking sheet and bake for about 25 minutes until golden brown.
  4. In a baking dish, spread some marinara sauce on the bottom. Layer half of the baked eggplant slices, followed by more marinara and half of the Parmesan cheese. Repeat layers.
  5. Top with remaining cheese and bake for an additional 20-25 minutes until bubbly and golden.
  6. Garnish with fresh basil, cut into squares, and serve.
