- 2 cups seasoned breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 2 cups marinara sauce (homemade or jarred)
- 2 large eggs, beaten
- 3 tbsp extra virgin olive oil
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Sprinkle salt over the eggplant slices and let them sit for 30 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices. Dip each slice in beaten eggs, then coat with seasoned breadcrumbs.
- Arrange the coated eggplant slices on a parchment-lined baking sheet and bake for about 25 minutes until golden brown.
- In a baking dish, spread some marinara sauce on the bottom. Layer half of the baked eggplant slices, followed by more marinara and half of the Parmesan cheese. Repeat layers.
- Top with remaining cheese and bake for an additional 20-25 minutes until bubbly and golden.
