  • 8 oz spaghetti or penne
  • 2 cups fresh tomatoes, diced
  • 1 cup whole-milk ricotta cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ½ cup fresh basil leaves, chopped
  • ¼ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by washing and dicing the fresh tomatoes and mincing the garlic.
  2. Boil salted water in a large pot. Add the pasta and cook until al dente according to package instructions; reserve some pasta water before draining.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 30 seconds).
  4. Add diced tomatoes, salt, and pepper to the skillet. Cook for 5-7 minutes until soft and juicy.
  5. Reduce heat, stir in ricotta cheese, adding reserved pasta water gradually for desired consistency.
