  • 8 oz rotini or penne pasta
  • 1 lb flank or sirloin steak
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ red onion, thinly sliced
  • ¼ cup fresh basil or parsley, chopped
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tbsp lemon juice (fresh-squeezed)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tsp Italian seasoning

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. Season steak with salt and pepper; grill or pan-sear over medium-high heat for about 4-5 minutes per side for medium-rare. Let rest before slicing.
  3. Chop cherry tomatoes, cucumber, red onion, and herbs while the steak rests.
  4. In a bowl, whisk together mayonnaise, sour cream, lemon juice, garlic powder, salt, pepper, and Italian seasoning.
  5. In a large mixing bowl, combine cooked pasta, chopped vegetables, and sliced steak. Add the dressing and mix gently until coated.
  6. Chill in the fridge for at least 30 minutes before serving.
