  • 4 medium Russet potatoes, diced (about 2 lbs)
  • 6 strips thick-cut bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 ½ cups sharp cheddar cheese, shredded
  • 2 green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy. Remove and set aside, leaving about two tablespoons of drippings in the pot.
  2. Add the chopped onion and minced garlic to the pot; sauté until onions are translucent.

  4. Reduce heat to low and partially cover; simmer for 15-20 minutes until potatoes are tender.
  5. Mash some potatoes in the pot for creaminess while leaving chunks for texture. Gradually stir in heavy cream.
