- 4 medium Yukon Gold or Russet potatoes, peeled and sliced (about 3–4 cups)
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 medium sweet onion, finely chopped
- 3 garlic cloves, minced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Wash and peel the potatoes, then slice them uniformly into 1/8-inch rounds.
- In your Instant Pot on sauté mode, melt butter and cook the chopped onion until translucent (3-5 minutes). Add minced garlic and sauté for an additional 30 seconds.
- Layer half of the potato slices at the bottom of the pot. Season with salt and pepper and pour half of the heavy cream over them. Sprinkle half of the cheese on top.
- Repeat layering with remaining potato slices, cream, cheese, salt, and pepper.
- Close the lid and set to high pressure for 10 minutes; allow natural pressure release for 10 minutes before quick-releasing any remaining steam.
- Let cool slightly before serving.
