  • 4 cups fresh tomatoes, chopped
  • 1 cup small curd cottage cheese
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups low-sodium vegetable broth
  • 1/4 cup fresh basil leaves, chopped
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop the fresh tomatoes into quarters.
  2. In a large pot over medium heat, add olive oil. Sauté the onions and garlic for 5 minutes until translucent.
  3. Stir in the chopped tomatoes and vegetable broth. Let simmer for about 10 minutes.
  4. Blend the mixture until smooth using an immersion blender or regular blender (let cool slightly if using a regular blender).
  5. Return the blended soup to low heat and stir in cottage cheese until combined and warmed through.
  6. Season with salt and pepper to taste, adding freshly chopped basil just before serving.
