- 8 oz spaghetti or fettuccine
- 8 oz fresh cremini or button mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté onions and mushrooms until softened (about 5 minutes).
- Add minced garlic and diced chicken; cook until chicken is golden brown and no longer pink (7-10 minutes).
- Pour in chicken broth and heavy cream; simmer while stirring.
- Fold in the cooked pasta until evenly coated with sauce.
- Transfer the mixture to a baking dish; top with Parmesan cheese and panko breadcrumbs.
- Bake for 25-30 minutes until bubbly and golden.
