Description

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz spaghetti or fettuccine
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté onions and mushrooms until softened (about 5 minutes).
  4. Add minced garlic and diced chicken; cook until chicken is golden brown and no longer pink (7-10 minutes).
  5. Pour in chicken broth and heavy cream; simmer while stirring.
  6. Fold in the cooked pasta until evenly coated with sauce.
  7. Transfer the mixture to a baking dish; top with Parmesan cheese and panko breadcrumbs.
  8. Bake for 25-30 minutes until bubbly and golden.
