  • 2 cans (15 oz each) low-sodium white beans, drained
  • 2 medium fresh lemons (juice and zest)
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh thyme or parsley, chopped

Instructions

  1. Chop onion and garlic finely, zest and juice lemons, rinse white beans.
  2. In a large pot over medium heat, add olive oil. Sauté onion until translucent (about 5 minutes). Stir in garlic until fragrant.
  3. Pour in drained beans and vegetable broth. Bring to a gentle simmer while stirring occasionally.
  4. Stir in lemon juice, zest, and fresh herbs. Simmer for another 10 minutes until heated through.
  5. For creaminess, use an immersion blender briefly to blend part of the soup while keeping some texture.
  6. Ladle soup into bowls, drizzle with olive oil, and sprinkle additional herbs on top.
