  • 1 cup diced bell peppers (mix of red, yellow, and green)
  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 14 oz canned diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1/2 cup uncooked white rice
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions until soft and translucent (about 5 minutes). Add garlic and cook until fragrant (about 1 minute).
  2. Add ground meat; break apart and cook until browned (7-10 minutes).
  3. Stir in bell peppers and diced tomatoes; cook for another 3-4 minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat to simmer for about 15 minutes.
  5. Add uncooked rice and spices; continue to simmer uncovered for another 20 minutes or until rice is tender.
  6. Taste and adjust seasoning as needed before serving.
